Bagel with Avocado and Poached Egg

A Delicious Bagel with Avocado and Egg – the Ultimate Power Snack – It’s a real power snack for those longs days at the office or while at home when you need a sustained energy boost. Plus it is absolute easy to make!!

DIRECTIONS:

  • Mash avocado with lemon, pink salt & pepper. 
  • Poach 2 eggs, cut bagel in half and toast. 
  • Toast bagel (optional)
  • Butter bagel (optional…I use KerryGold Irish Butter), spread avocado mix evenly, top with your poached eggs and sprinkle with pink salt (and any other seasons you choose). 
Enjoy with a smile…you just might thank me.
