Oven Baked Eggs with Marinara Sauce

  • 1 cup Marinara Sauce (jarred or your favorite recipe)
  • 1/4 cup Shredded Parmesan Cheese
  • 4 Eggs
  • Salt and Pepper (to taste)
  • Fresh Basil or Parsley (optional)
  • Serve with toast or baguette slices (optional)
  1. Preheat oven to 425 degrees and line a baking sheet with foil.
  2. Pour 1/2 a cup of the marinara sauce into two 6 inch cast iron skillets or two 10 ounce ramekins.
  3. Top the marinara sauce with 2 tablespoons each of parmesan cheese.
  4. Gently crack 2 eggs into each skillet.
  5. Top the eggs with salt and pepper then place them on the foil lined baking sheet.
  6. Bake the eggs in the oven for 10-15 minutes or until the whites of the eggs are set.
  7. Remove from the oven and sprinkle with parsley or basil if desired.
  8. Serve immediately with toasted baguette slices.
