Healthy Dessert – Dark Chocolate and Tofu Tart

A healthy dessert such as dark chocolate and tofu helps prove that feelings are delicious when your in the kitchen…even better when they are guilt free.

Ingredients:

  • 1 pkg Plain Gelatin Mix
  • 1/4 c Superfine White Sugar
  • 1/4 c Orange Juice
  • 1 Large Container Fat Free Cool Whip
  • 6 ozĀ  Dark Chocolate
  • 2 Chocolate Graham Cracker Crusts
  • 9 oz Soft Tofu

Directions:

For the filling, in a small bowl, sprinkle the gelatin over the orange juice. Allow to stand for a few minutes, then dissolve in the microwave for 3-4 minutes on defrost setting, or stand the bowl in a pan of hot water to soften the gelatin. Chop the chocolate into small pieces and place in a mixing bowl. Stand the bowl over a pan of hot water and leave until melted. Puree the tofu with the sugar until smooth. Stir the dissolved gelatin into the chocolate once it is melted. Add to the tofu mixture. Gently stir the chocolate mixture into the cool whip until well mixed. Spoon the mixture into the cookie crusts and chill until firmly set. Decorate with raspberries and a dusting of powdered sugar and cocoa.

Makes 2 pies, 10 servings each
