A Single Serving Chocolate Chip Oatmeal Cookie

 

  • 1 tbsp Unsalted Butter (room temperature)
  • 1 tbsp Brown Sugar
  • 1/2 tbsp Coconut Sugar
  • 1/4 teaspoon Vanilla Extract
  • 2 tbsp Preferred Flour (almond flour or plain ol’ all-purpose)
  • Pinch A few pinches of kosher salt
  • 1 tbsp Chocolate Chips
  • 1-2 teaspoon Slivered Almonds
  • 2 teaspoon Rolled Oats
  1. Preheat oven to 350 degrees and line a baking sheet with a small piece of parchment paper.
  2. Mix butter, both sugars, and vanilla extract together with a fork until light and fluffy.
  3. Mix in flour and salt until just combined, then add chocolate chips, almonds, and oats. If mixture seems crumbly, use your hands to mix it together.
  4. Roll dough into a ball, then press down into whatever cookie shape you prefer. We like the classic round. Bonus: If you don’t have the time (or patience) to wait for your oven to heat, you can eat your cookie raw. Yes, you can actually eat the cookie dough.
  5. Bake for 10-15 minutes, depending on how crispy you like your cookies.
