Being a busy parent, I understand how things can get in the mornings – particularly with the kiddos.  When that alarm goes off in the mornings – breakfast generally isn’t our first thought of the day.  Eating a healthy breakfast can have a tremendous positive impact on your body, affecting your energy, attention, concentration, and memory. A healthy breakfast has also been proven to help with weight loss. Unfortunately, millions of busy parents skip breakfast, with those morning time restraints being one of the top reasons for this behavior. With just a few minutes of preparation, you can be on your way to an energy-fueled, productive day.

Consider these healthy options depending on the morning you’re having!

Wake up on Time?

  • Scrambled Eggs: Serve with turkey bacon, fruit, and whole grain toast.
  • Egg-White Veggie Scrambler: Sauté some spinach, peppers, tomatoes, and/or onions in olive oil, mix in egg whites, and enjoy with a bowl of fresh fruit or toast.
  • Avocado Toast: Slice half of an avocado and place over one piece of whole-grain toast. Or, add sliced tomatoes and a sunny side up (or hard-boiled) egg.

Hit the Snooze Button One Time?

  • English Muffin Sandwich: Toast a whole-grain English muffin. Put low-fat cheese and sliced deli ham or turkey on the toasted muffin. Warm the sandwich in the microwave to melt the cheese.
  • Breakfast Tacos: Scramble and cook one egg (or two egg whites). Serve eggs, salsa, and low-fat cheese on corn tortillas.
  • Peanut/Almond Butter and Banana Sandwich: Spread some nut butter on a whole-grain waffle or toast and add banana slices.

Hit the Snooze Button Three (or More) Times?

  • Instant Oatmeal: Look for varieties without added sugar, add water, and microwave.
  • One-Minute Scrambled Eggs: Put eggs and a splash of milk in a bowl, whisk it up, and put it in the microwave for 30 seconds. Stir and put back in for another 10 seconds.

Enjoy last night’s steak with eggs or top your toast with some leftover chili!
