Not much more says summer than opening up the grill and making some grilling up some delicious food – such as chicken.  Add some summer flavors such as mango and pepper – well it all gets elevated!  Try this recipe at your next BBQ and you won’t be disappointed!

INGREDIENTS:

  • 8 Chicken Breasts, boneless skinless —- salt and pepper to taste
  • 1 cup Red bell pepper, chopped
  • 1/4 cup Onion, chopped
  • 1T. Olive Oil
  • 1 Medium Mango, peeled and chopped
  • 1/8c. Brown Sugar
  • 1T. Rice Wine Vinegar
  • 1/4t. Crushed Red Pepper, or to taste
  • 1/8t. Salt
  • 1T. Green Onion, finely chopped

DIRECTIONS:

Make Sauce: In a skillet, cook the red pepper and onion in the oil until tender.  Stir in the other ingredients except the green onion.  Bring to a boil, reduce heat and simmer for 10 minutes or until mango are tender.  Cool mixture and puree it into a smooth sauce.  Stir in green onion.  Sauce will keep for 2 weeks.

Sprinkle salt and pepper on chicken and grill over a hot grill until done.  Just before chicken is ready, brush with some of the barbeque sauce.  Serve sauce with chicken.
