As a Personal Trainer and Wellness Coach I am not “suppose to” admit I have food cravings – we are suppose to always eat perfect…don’t ask me why…I think it is ridiculous…some unspoken rule made by the fitness gods somewhere down the line.  But hey, I am normal…I am Cajun…I am human.  And one of the foods I crave most often is Cheesecake.  And being summer – with this Mixed Berry Cheesecake Popsicle treat…there is no more of a perfect time to indulge!!!

MIXED BERRY CHEESECAKE POPSICLE

Ingredients:

1 (8-ounce) brick cream cheese (can use low-fat if you choose)
1 cup Almond Milk
1/4 cup honey
1 teaspoon vanilla extract
Pinch of salt
2 cups fresh berries of your choice – chop and rinse
2 graham cracker sheets – chopped

Directions:

  1. Add cream cheese, almondmilk, honey, vanilla and salt to a blender. Puree until smooth.
  2. Stir in the berries and graham crackers until combined.
  3. Pour the mixture into ice pop molds. Then freeze until solid (generally takes about 4 to 6 hours)
  4. Serve frozen
